Wellness Lunch and Learn: Nutrient Loss Across the Food Journey in Rural and Underserved Populations
1. Explain how agricultural practices, food processing, storage, and preparation affect nutrient density across the food journey.
2. Describe how poverty, rural geography, and structural barriers (transportation, refrigeration, cost, and retail access) influence food choices and nutritional quality.
3. Identify key points of nutrient loss and excess (e.g., sodium, added sugars) from grocery purchase through home preparation, particularly in low-access settings.
4. Apply practical, evidence-based, and harm-reduction strategies to support nutrition preservation and chronic disease prevention in underserved patients.
